Mango Cinnamon Overnight Oats


Perfect Breakfast Oats!

You will need:
  • 1/2 cup rolled oats
  • 1/2 mango chopped
  • Cinnamon to your taste (I use 2 tsp)
  • 1/4 cup Hot water
  • 1 tbsp non dairy milk (almond milk, soy milk etc.)
Preparation:
Pour the oats into a bowl and add the hot water and the milk. Chop the mango into small chunks and add them to the oats. Add the cinnamon and mix well! Put into the fridge for at least 5 hours or overnight. This oatmeal tastes great with fresh fruits like blueberries and raspberries but you can add anything you like!

Healthy Muffins



Wholewheat Lemon Berry Muffins!

Ingredients:
  • 1 3/4 cups Spelt Wholemeal flour
  • 2 eggs
  • 1/2 cup dairy milk (or non dairy milk, almond milk etc.)
  • 1/2 cup coconut butter/oil
  • pinch of salt
  • 4 tbsp honey
  • 2 tsp baking powder
  • juice from half lemon
  • 1/2 cup frozen berries (blueberries, raspberries etc.)
  • 2 tbsp oatmeal (not instant)
Preperation:
Preheat oven to 360°F (180°C).
Blend the coconut butter and honey until smooth. Add the eggs (one at the time) and mix.
Pour in the lemon juice and add the salt. Mix again. Combine the flour with the baking powder and sift. Add the flour and the milk to the coconut butter egg mixture and mix well until everything is combined. Now fold in the berries and oatmeal gently and pour the mixture into muffin tray.
Recipe for 12 muffins.

Challah






Sweet and soft Yeast Bun

Ingredients:

  • 4 cups of plain white flour 
  • 30g (1oz.) dry yeast
  • 1 cup warm milk
  • 1/2 cup butter
  • 1/3 cup granulated sugar
  • 1 pinch of salt
  • 2 eggs
  • 1 egg yolk + 2tbls milk (for coating)
Preperation:
Preheat oven to 325°F (170°C).
Sift the flour into a big bowl and crumble the yeast into the middle of your bowl. Add a little bit of the sugar and pour some of the warm milk over it. Cover with fabric an let it rest for about 30min in a warm place. Now add the rest of the sugar, milk, salt, butter and the 2 eggs (roomtemperature). Combine all the ingredients until a dough is formed (add some extra flour if too sticky). Put the dough into the large bowl, cover up and let it rest for another 30-40 minutes in a warm place.
Divide the dough into three pieces and braid on a greased baking tray. Let it rest for another 10min and now brush the yolk and milk mixture onto your braid. Bake for around 50 minutes until golden brown.

Amazing Brownies






Creamy, fudgy and heavenly Brownies

You need:

  • 1 cup dark chocolate
  • 1/2 cup white chocolate (chopped)
  • 2 eggs
  • 1/2 cup granulated sugar
  • 85 ml vegetable oil
  • 3/4 cup white flour
  • pinch of salt
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
Let's start:
Preheat oven to 325°F (170°C).
Melt the dark chocolate and let it cool slightly. Beat the eggs until fluffy and add the sugar while beating. Now add the melted chocolate ( room temperature! ), the vegetable oil, salt and vanilla extract. Mix again. Sift the flour and the baking powder and fold into the chocolate mixture.
Mix in the white chocolate. Take a brownie baking tray and line with baking paper.
Pour in the brownie mixture and bake for 20-25 minutes.

Broccoli and Quinoa Soup






Delicious and creamy Veggie Soup

Ingredients:

  • 1 cup broccoli (fresh or frozen)
  • 1 stack celery (chopped)
  • 1/4 cup chopped carrot
  • 1 onion
  • 1 clove of garlic
  • 1/2 cup green peas
  • 1 cup cooked Quinoa
  • 1/4 cup milk or non dairy milk( soy milk, almond milk etc.)
  • 1 cup vegetable stock
  • 1 Tbs olive oil
  • salt and pepper and other spices to your taste
Preparation:
Start cooking Quinoa with 2 cups of water for 15 minutes or until the water is absorbed. Now chop all the veggies into small pieces and start to sauté the garlic and onion with the ovile oil until golden brown in a pot.
Add the chopped carrot, celery and broccoli and cook until soft. After that add the vegetable stock and purée until creamy. Pour in the milk,  add the green peas, cooked Quinoa and flavor with salt and pepper and other spices. Cook for another 3 minutes and you are ready!

Very Berry Smoothie






Mango and Mixed Berry Smoothie

Ingredients:

  • 1/2 mango
  • 1/4 cup frozen raspberries + some fresh for decoration
  • 1/4 cup strawberries
  • 1/4 cup blueberries
  • 1/4 cup buttermilk
  • 1/8 cup water
Preparation:
Blend all the ingredients in a mixer until smooth. Garnish with some fresh raspberries and enjoy!

Hot Lemon and Ginger Tea






Perfect for a cold winter morning

What you will need:
  • 1 cup of water
  • 1/2 lemon and half a slice for decoration
  • 1 small piece of ginger
  • 1 tsp honey (add more to your taste)
Let's start:
Bring water and the grated ginger to boil. Remove from the heat and add the lemon juice.
Take your cup, add the lemon slice, honey and pour your tea over it. Do not forget to strain!

Rice Salad







How to make a fresh and yummy Salad

What you will need:

  • 1 cup boiled rice
  • 1 chopped tomato
  • 1/2 chopped red capsicum
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped lettuce
  • 1 small onion
  • 1 Tbs olive oil
  • pepper and salt to your taste (You can also add some vinegar if you like)
Get ready:

Boil the rice as in the description and chop all the vegetables into small pieces.
When the rice is ready, let it cool slightly and mix in the chopped veggies.
When everything is combined, add the olive oil and the seasoning. Mix well again and you are ready to go!

Strawberry Smoothie



Recipe for delicious Summer Smoothie

Ingredients:
  •  1/2 cup fresh strawberries
  •  1 medium ripe banana
  •  3 ice cubes
  •  1 tsp honey
  •  juice of 1/2 lemon
Preparation:

Add all the ingredients into a mixer and blend until smooth.
